Ingredients
- 3 bunches radishes (with greens)
- 100 g radish leaves
- 200 g waxy potatoes
- 1 Shallot
- 15 g Butter (1 tbsp)
- 900 ml vegetable stock
- 100 g Sour cream
- Salt
- Pepper
- nutmeg
Instructions

Wash radishes and leaves thoroughly, set aside 5 pieces, roughly chop the rest with greens. Wash, peel, and cube potatoes. Peel and cube shallot.

Heat butter in a pot. Sauté shallot over medium heat until translucent. Add potato cubes, chopped radishes, and radish greens; cook for 3 minutes.

Add stock, bring to boil, then cover and simmer on low heat for 20 minutes. Meanwhile slice 5 radishes into rounds.

Puree the soup finely and stir in 80 g sour cream. Season with salt, pepper, and freshly grated nutmeg. Ladle soup into six preheated bowls, drizzle remaining sour cream, and garnish with radish slices.
