Fried Eggplant Slices

The fried eggplant slices with yogurt are a great and summery starter or side dish that always comes in well.
Ingredients
- 2 medium eggplants
- 4 tbsp olive oil
- Salt
- freshly ground pepper
- 1 cup (200 g) plain yogurt
- 2 sprigs fresh oregano
Instructions

Wash, dry, trim the eggplants and slice them into long strips. Heat oil in a pan and fry the slices on both sides until golden brown. Let cool on paper towels.

Arrange fried eggplant slices on a plate. Season with salt and pepper, whisk yogurt smooth and pour over the slices. Rinse oregano, shake dry, pluck leaves and sprinkle over the yogurt.
