Chicorée Radish Salad

Ingredients

  • 4 chicory heads
  • 1 Red Onion
  • 8 radishes
  • 1 Pomegranate
  • 1 stalk Parsley
  • 4 tbsp white balsamic vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp Honey
  • Salt
  • black pepper (freshly ground)
  • 4 tbsp olive oil

Instructions

    Wash, trim and tear the chicory leaves into bite-sized pieces. Peel, halve, and slice the onion into thin strips. Wash, trim, and cut radishes into thin slices or half-moons. Gently press the pomegranate to release seeds, then separate the seeds from the pulp. Rinse the parsley, pat dry, and pluck the leaves. Arrange all prepared salad ingredients decoratively on plates.

    Whisk together balsamic vinegar, lemon juice, honey, salt, pepper, and olive oil for the dressing. Taste and adjust seasoning. Drizzle over the salad and serve immediately.
