Fried Radishes

Ingredients
- 800 g radishes (red and white)
- 2 tbsp butter
- 0.5 tsp Sugar
- Sea salt
- 100 ml Vegetable broth
- a splash of lemon juice

Wash, trim, and cut a few leaves into strips for garnish. Quarter the radishes and quickly sauté in hot butter. Add sugar and season with salt. Deglaze with broth and cover to steam gently for about 10 minutes until tender.

Remove the lid, let the liquid evaporate, season with salt and lemon juice, and serve garnished with radish leaves.
