Hearty Black Salsify Salad

Ingredients
- 800 g black salsify
- 2 tbsp vinegar
- 2 tbsp flour
- 3 stalks leeks
- Salt
- Pepper (freshly ground)
- 50 g salami (sliced)
- 2 tbsp pine nuts
- 2 tbsp white wine vinegar
- 4 Tbsp sunflower oil
- 2 tbsp Sour cream
- 1 tbsp chopped tarragon leaves
Instructions

Whisk vinegar and flour with about 1 l water.

Peel, wash black salsify and cut into ~4 cm pieces; immediately place in the vinegar-water mixture and simmer for about 40 min.

Clean leeks, halve lengthwise, rinse, cut into ~2 cm pieces; cover with lightly salted water and cook for about 8 min, then drain and shock in ice water to stop cooking.

Toast pine nuts in a dry pan without oil.

Mix white wine vinegar with salt and pepper; whisk in oil and sour cream, add tarragon, taste and adjust seasoning.

Drain black salsify, let it drip, mix with leeks and salad dressing, plate, garnish with salami slices tucked into small bundles and sprinkle pine nuts. Serve with rye bread.
