Ingredients

  • 1 onion
  • 300 g radicchio (1 head)
  • 2 tbsp butter
  • 300 g Italian risotto rice
  • 750 ml robust Italian red wine
  • 50 g grated Parmesan
  • Salt
  • Pepper (freshly ground)

Instructions

    Peel and finely dice the onion. Remove the outer leaves of the radicchio, quarter the remaining part, wash it, and slice into thin strips.

    Heat 1 tbsp butter in a wide pot, add the onion and radicchio, sauté briefly. Add the rice, pour in one ladle of wine, let it evaporate. Reduce heat, gradually add the rest of the wine while stirring continuously for about 20 minutes until the risotto is cooked but still al dente. Fold in the remaining butter and parmesan, season with salt and pepper, and serve on preheated plates.
