Radicchio and Arugula Salad with Cherry Tomatoes and Parmesan

Ingredients

  • 1 head radicchio
  • 1 bunch arugula
  • 200 g cocktail tomatoes
  • 1 piece parmesan (ca. 150 g)
  • 4 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tbsp water
  • 2 pinch sugar
  • Salt
  • pepper (ground)
  • 1 Garlic clove
  • fresh basil (to taste)

Instructions

    For the salad, cut conical pieces from the radicchio heads, remove and wash the leaves, then slice into fine strips. Trim the arugula stems slightly, wash, and halve the leaves. Wash the tomatoes, halve them, and remove stem ends. Mix all salad ingredients and arrange in four bowls.

    To make the dressing, whisk together oil, vinegar, water, and spices. Peel and finely dice the garlic clove, then add it to the mixture. Finely chop basil to taste and stir in. Drizzle the dressing over the salad.

    Before serving, shave thin slices of parmesan and place them on top of the salad.
