Ingredients
- 1.2 kg rabbit (1 whole rabbit) divided into 7 parts
- 2 onions (diced)
- 150 g celery cubes
- 150 g carrots (sliced)
- 400 g Brussels sprouts (trimmed and halved)
- 1 tbsp thyme
- 2 Bay leaves
- 1 clove garlic (finely diced)
- spiced poultry broth
- oil
- salt (pepper)
Instructions

Season rabbit pieces well and brown them in a little oil on all sides. Add celery, carrots, thyme, bay leaves, onion cubes and garlic. Let them sear briefly, then add cold water to cover everything. Simmer gently for 45 minutes, skimming foam from the broth several times with a ladle. Add Brussels sprouts and simmer another 15 minutes.

Season with spiced poultry broth, salt and pepper.
