Ingredients
- 800 g carrots
- 1 celery stalk
- 1 Shallot
- 2 tbsp plant oil
- 0.25 tsp cumin seeds
- 0.25 tsp ground coriander
- 0.5 tsp turmeric
- 250 ml vegetable broth (vegan)
- a handful basil
- Salt
- freshly ground pepper
- 1 pinch sugar
- 1 splash Lemon juice

Peel the carrots and slice them into thin rounds. Wash the celery, remove the fibers, and cut it into thin slices. Peel the shallot, dice finely, and sauté in a pot with hot oil. Briefly fry the cumin and turmeric, then add the carrots and celery. Deglaze with broth and simmer for 5-7 minutes. Rinse the basil, shake dry, pluck leaves, and finely chop all but four leaves for garnish. Season the stew with salt, pepper, sugar, and lemon juice. Serve in bowls, sprinkled with basil and garnished.
