Quinoa with Vegetables in Broth

Ingredients

  • 200 g Quinoa
  • Salt
  • 800 ml vegetable broth
  • 1 yellow bell pepper
  • 2 large tomatoes
  • 1 white vegetable onion
  • 2 EL olive oil
  • 0.5 TL dried oregano
  • chili flakes
  • basil (for garnish)

Instructions

    Rinse the quinoa under hot water and simmer in about 500 ml salted water for approximately 20 minutes.

    Bring the broth to a boil. Wash the bell pepper, halve it, remove seeds, and cut into strips. Quarter the tomatoes and remove stems. Peel the onion and slice into wedges. Sauté in hot oil for about 2 minutes.

    Add the pepper strips briefly, then add the tomatoes and let them soften for about 3 minutes. Sprinkle with oregano and chili flakes and season with salt.

    Distribute onto plates, pour the seasoned broth over, top with drained quinoa (if needed), and serve garnished with basil leaves.
