Quinoa Salad with Tomatoes and Herbs

Ingredients

  • 200 g Quinoa
  • 500 ml vegetable broth
  • 350 g tomatoes (4 tomatoes)
  • 1 handful herbs (parsley and mint)
  • 1 Organic lemon
  • 2 tbsp olive oil
  • Salt
  • Pepper

Instructions

    Rinse the quinoa in a sieve under hot water until it runs clear, then drain. Cook in boiling broth for about 20 minutes over low heat. Remove from heat and let stand for another 5 minutes to absorb.

    Meanwhile wash the tomatoes, remove stems, and dice them finely. Wash parsley and mint, shake off excess moisture, and finely chop the leaves. Rinse the lemon under hot water, pat dry, grate the zest, and squeeze out the juice. Combine quinoa with tomatoes, herbs, 2–3 tbsp lemon juice, 1 tsp lemon zest, and olive oil; season with salt and pepper.
