Paprika Lasagna

Ingredients

  • 12 paprika peppers (red, yellow and green)
  • Olive oil (for the tray and baking dish)
  • 2 Garlic cloves
  • 1 tsp Dried oregano
  • 400 g passata tomatoes
  • 1 splash Lemon juice
  • a pinch sugar
  • Salt
  • Pepper
  • 200 g Feta Cheese
  • 200 g ricotta cheese
  • 12 lasagna sheets
  • grated parmesan cheese (to sprinkle)

Instructions

  1. 1.

    Wash the paprika peppers, halve them, clean and place skin side up on an oiled baking sheet. Slide under the grill and grill until the skin blisters and turns black. Remove from oven, cover with a damp kitchen towel, let cool and peel off the skin.

    Turn the oven to 180°C fan.

    Peel and finely chop the garlic. Stir it together with oregano into the tomatoes and season strongly with lemon juice, sugar, salt and pepper.

    Crush the feta and mix loosely with well-drained ricotta.

    Lay a layer of noodles on the bottom of an oiled baking dish. Spread some cheese mixture over them and top with paprika. Pour tomato sauce over and cover with another noodle layer. Continue layering until all ingredients are used. Finish with tomato sauce and bake in the oven for about 40 minutes.

    Serve sprinkled with parmesan.
