Quinoa Salad with Apple

The quinoa salad with apple from Spoonsparrow is perfect as a balanced lunch and can be prepared in advance.

Ingredients

  • 150 g quinoa
  • 450 ml vegetable broth
  • 4 tbsp Lemon juice
  • 2 tbsp white wine vinegar
  • Salt
  • white pepper
  • 1 tsp Honey
  • 0.5 tsp mustard
  • 2 tbsp olive oil
  • 2 carrots
  • 1 apple
  • 2 Spring Onions
  • 1 small romaine lettuce
  • 1 handful herbs (5 g; parsley, dill)
  • 2 tbsp sunflower seeds (30 g)

Instructions

    Rinse the quinoa in a sieve. Then simmer it in boiling vegetable broth for about 15 minutes over low heat. Let it cool.

    Meanwhile whisk lemon juice with vinegar, salt, pepper, honey, mustard and oil.

    Peel, wash and grate the carrots. Wash, core and slice the apple into strips, then mix with carrots and dressing.

    Wash and trim the spring onions, cutting them into thin rings or chopping. Clean and wash the lettuce, slicing it into thin strips. Rinse the herbs, pat dry and finely chop.

    Fluff the quinoa and combine with carrots, spring onions, apple and lettuce strips. Season again with salt and pepper, serve on plates and garnish with herbs and sunflower seeds.
