Edamame Salad with Feta from Spoonsparrow: Light, fresh and healthy for the office everyday.

Ingredients

  • 1 Organic lemon
  • 10 g ginger (1 piece)
  • 1 tbsp honey
  • 2 tbsp sesame oil
  • 1 tsp Black sesame
  • Salt
  • 400 g shelled Edamame (frozen)
  • 1 cucumber
  • 0.5 Red chili pepper
  • 0.5 bunch coriander (10 g)
  • 150 g Feta

Instructions

    Wash the lemon, dry rub it, zest it and squeeze the juice. Peel and finely chop the ginger. Mix the lemon juice with ginger, honey, sesame oil, sesame, salt and 2 tbsp of water well.

    Blanch edamame in boiling salted water for 2–3 minutes. Then drain and rinse with cold water.

    Clean, wash, halve and julienne the cucumber. Clean, wash and thinly slice the chili pepper diagonally. Wash, shake dry, pluck the leaves and roughly chop the coriander. Crumble the feta.

  4. 4.

    Mix edamame, cucumber and chili pepper with the vinaigrette. Gently fold in the feta, half of the lemon zest and half of the coriander. Serve sprinkled with the remaining coriander and lemon zest.
