Ingredients
- 500 g fresh spinach-filled tortellini
- 1 onion
- 1 Garlic clove
- 1 tsp butter
- 0.125 l white wine
- 0.125 l vegetable broth
- 250 g heavy cream
- 1 block of cream cheese
- 20 g grated Parmesan
- 300 g arugula
- salt, pepper, nutmeg

Peel and finely chop the onion and garlic; sauté in butter, then pour in wine and broth and reduce by half.

Reserve 3 tbsp, set aside. Pour in cream, bring to a boil, dissolve the cream cheese, stir in Parmesan, reduce further, season with salt and pepper.

Cook tortellini according to package instructions, drain. Clean and wash arugula, cut into strips. Toss tortellini with the cheese sauce, fold in arugula leaves, drizzle remaining broth over, and season with nutmeg.
