Apple Quark Cake with Almonds

Ingredients

  • 350 g flour
  • 1 cube yeast
  • 80 g sugar
  • 100 ml milk (lukewarm)
  • 1 egg
  • 50 g butter (soft)
  • 1 pinch salt
  • 4 eggs
  • 120 g sugar
  • 2 packets vanilla sugar
  • 1 Vanilla bean
  • 750 g low-fat quark
  • 1 packet pudding powder, cream flavor (for 500 ml milk to cook)
  • 100 g almond kernels (deveined, ground)
  • 1.5 kg apples (tart)
  • 500 g pears
  • 2 lemons (juiced)
  • 100 g almond slivers
  • 50 g butter (melted)
  • 80 g quince jam

Instructions

    Sift the flour into a bowl and create a well in the center. Crumble the yeast into the well, add 1 tsp sugar and 3-4 tbsp milk, stir gently and let rise for about 15 minutes. Then add the remaining dough ingredients and knead with a hand mixer until smooth. Cover and let the dough rise until doubled in volume.

    Meanwhile peel, quarter, and core the apples and pears. Roughly grate the pears and mix with half of the lemon juice. Whisk the quark with eggs, sugar, vanilla sugar, vanilla bean, and pudding powder until smooth. Fold in the almonds. Squeeze the grated pears slightly and stir into the quark mixture. Slice the remaining apples into wedges and drizzle with lemon juice.

    Preheat the oven to 180°C (356°F).

    Roll out the yeast dough on a floured surface to baking sheet size and place on parchment paper. Spread the quark mixture evenly over the dough and top with apple wedges. Bake in the preheated oven for 1 hour. Warm the jam and brush it over the apples.
