Ingredients
- 500 g wheat flour (Type 550)
- 1 packet baking powder
- 1 tsp salt
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 tsp grated lemon zest
- 250 g low-fat quark
- 1 egg
- 100 ml milk
- 100 ml plant oil
- baking paper (for the trays)
- flour (for working)
- milk (for brushing)

Mix flour and baking powder, sift into a bowl. Sprinkle salt, sugar, and vanilla sugar over it, add lemon zest, quark, egg, milk, and oil, and work everything into a smooth dough.

Line two baking trays with baking paper. On a floured surface shape the dough into a roll, divide it into 15 equal portions. Shape each portion into a round bun, knot or braid and place on the trays. Brush with milk and bake in a preheated oven at 180°C (middle rack) for 25-30 minutes until golden brown.
