Quick Potato Basil Püree

Ingredients
- 800 g potatoes (peeled, weighed)
- Salt
- black pepper (freshly ground)
- 4 tbsp finely chopped basil
- 200 ml heavy cream
- 1 tbsp butter
- 30 g pine nuts

Cut the potatoes into cubes, add about 100 ml water and salt to a saucepan, cover and cook at 850 W for 12–15 min. Drain and press through a potato masher.

Blend basil with some cream, then mix in the remaining cream, butter and pepper with the mashed potatoes.

Toast pine nuts in a dry pan until golden yellow and sprinkle over the purée.
