Ingredients
- 500 g mushrooms
- 2 shallots
- 1 tbsp butter
- 2 tsp lemon juice
- 200 ml vegetable stock
- 50 ml white wine
- 200 g crème fraîche
- 2 parsley sprigs
- Salt
- Pepper

Peel and finely chop the shallots, then sauté them in butter. Clean the mushrooms; set aside 100 g, coarsely chop the rest and drizzle with lemon juice. Add chopped mushrooms to the onions, cook until liquid evaporates. Puree the mushrooms and mix with vegetable stock and white wine, bring to a boil once.

Stir in crème fraîche, season with salt and pepper. Finely slice remaining mushrooms and fold them into the soup or sprinkle over individual bowls. Serve the soup in deep bowls garnished with parsley leaves.
