Classic Mushroom Soup

Classic mushroom soup from Spoonsparrow is always a hit and can be prepared in no time.

Ingredients

  • 250 g Mushrooms
  • 1 onion
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup heavy cream
  • 0.5 l vegetable broth (from a can)
  • 2 tbsp Sour cream
  • 0.5 bunch thyme
  • salt and pepper

Instructions

    Clean the mushrooms, wipe them with a kitchen towel and finely chop. Peel and finely chop the onion, then sauté in butter until translucent.

    Add the mushrooms and cook for 4 minutes until liquid has evaporated. Sprinkle flour over the mixture, stir, and pour in hot vegetable broth. Simmer for 10 minutes, add cream, and cook for another 5 minutes on low heat. Finely chop thyme and fold into the soup with sour cream. Season with salt and pepper.
