Ingredients

  • 350 g thick beans (frozen)
  • 3 beef tomatoes
  • 350 g carrots
  • 0.5 celery root
  • 1 Zucchini
  • 100 g turkey bacon
  • 2 onions
  • 2 tbsp olive oil
  • 4 Potatoes
  • 100 g whole grain rice
  • 80 g freshly grated Parmesan
  • Salt
  • Pepper

Instructions

    Heat water and pour over tomatoes, then cool, peel, quarter, seed, and roughly chop them. Thaw the beans. Peel, wash, and dice carrots and celery root. Wash zucchini, trim ends, and slice into thick rounds. Dice bacon and sauté in hot oil until translucent. Peel onions, finely chop, and cook with bacon.

    Peel potatoes, wash, and dice finely. Add to pot with carrots and celery root, stirring while cooking. Pour in 1 l water and simmer for 20 minutes. Add tomatoes, zucchini, beans, and rice; bring to a boil and then cover and simmer on low heat for another 20 minutes. Season with salt and pepper, sprinkle with parmesan, and serve.
