Pureed Vegetable Soup

Ingredients
- 2 onions
- 1 Garlic clove
- 2 parsley roots
- 150 g celery stalks
- 2 Zucchini
- 1 leek stalk
- 30 g Butter
- 600 ml Vegetable Broth
- Salt
- Pepper (freshly ground)
- 4 tbsp heavy cream
Instructions

Peel and dice the onions, garlic, parsley root, and celery. Clean, wash, and cube the zucchini. Trim, wash, and finely chop the leek.

Heat the butter in a pot, lightly brown the vegetables, then add the vegetable broth. Season with salt and pepper. Bring to a boil and simmer, stirring occasionally, for about 15 minutes.

Blend the contents of the pot until smooth, then cook on low heat for an additional ~5 minutes. Serve in bowls and drizzle heavy cream decoratively over each.
