Ingredients

  • 400 g macaroni
  • Salt
  • 500 ml milk
  • 175 g grated cheddar
  • 1 tsp medium-hot mustard
  • black pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 2 tbsp starch
  • 2 tbsp chives

Instructions

    Cook the pasta in boiling salted water until al dente. Drain and set aside.

    Whisk together the milk, cheese, mustard, salt, pepper, nutmeg, and starch. Mix with the pasta and divide into four microwave-safe bowls.

    Heat each bowl on high (about 800 watts) for approximately 2 minutes, stirring halfway through. The cheese should be melted and the sauce creamy.

    If needed, cook a little longer. Sprinkle with chives and freshly ground pepper before serving.
