Quiche with Flat Green Beans

- 125 g butter

- 400 g flat green beans
- 5 eggs
- 75 g grated Emmental cheese
- 300 ml whipping cream
- Salt

- leek strips (for garnish)

For the dough, quickly knead the butter with 1 tsp salt, flour and 50 ml cold water into a smooth dough. Wrap the dough in cling film and chill in the refrigerator for 1 hour.

Meanwhile, wash, trim and cut the beans diagonally into short segments. Blanch them in boiling salted water for 5 minutes, then shock in ice water and drain. Whisk together eggs, cheese and cream, seasoning with salt and pepper.

Butter a 28 cm springform pan, dust with flour, line with dough and shape a rim. Preheat the oven to 180 °C (convection). Cut a circle from parchment paper the size of the pan. Cover the dough with it, sprinkle the legumes on top and blind bake for about 10 minutes. Remove the legumes and paper.

Distribute the beans over the crust and pour the cream mixture over them. Bake in the oven for about 45 minutes until set. Garnish with leek strips.
