- 75 g spinach
- 1 tbsp butter
- Salt
- pepper (from grinder)
- 250 g Cherry Tomatoes
- 40 g pine nuts
- 120 g bacon cubes
- 8 eggs
- 50 ml milk
- 400 g puff pastry
- flour (for work surface)

Wash and trim the spinach. Heat the butter in a pot and wilt the spinach while stirring. Season with salt and pepper, squeeze out excess water and drain. Wash the cherry tomatoes. Toast the pine nuts in a dry pan, remove them, then render the bacon in the same pan. Whisk together eggs and milk, season with salt and pepper.

Preheat the oven to 200 °C (392 °F) with upper and lower heat.

Roll out the puff pastry on a floured surface to a circle that fits the dish. Line the dish with parchment paper and cover it with the pastry, shaping a rim. Spread the spinach, bacon and tomatoes over the pastry base, pour the egg mixture over them, and bake in the oven for about 35 minutes.
