Ingredients

  • 175 g flour
  • 75 g butter
  • 1 egg yolk
  • 25 g butter
  • 15 ml olive oil
  • 1 kg onions
  • 1 Garlic clove
  • 15 g sugar
  • 3 eggs
  • 300 g whipping cream
  • Salt
  • pepper (ground)

Instructions

    Process flour and butter into crumbs with fingertips, add the egg yolk and 2–3 tbsp cold water, quickly knead into dough. Shape into a ball, wrap in cling film and refrigerate for 30 minutes.

    Peel onions, cut them lengthwise in half and then slice crosswise into strips.

    Peel garlic and finely chop it.

    Heat butter and oil in a large pan, add onions and garlic, cover and cook over low heat for about 30 minutes until the onions are soft but not browned. Sprinkle with sugar and continue cooking for another 5 minutes.

    Whisk eggs with cream and season with salt and pepper.

    Roll out the dough between two sheets of parchment paper and line a greased quiche tin (23 cm). Spread the onions over the base and pour the egg‑cream mixture on top.

    Bake in a preheated oven at 200 °C for 20 minutes, then reduce the temperature to 180 °C and bake another 20–25 minutes until the quiche is nicely browned. Serve immediately.
