Quiche Lorraine

Ingredients
- 250 g spelt flour
- Salt
- 125 g cold butter
- 250 g smoked ham
- 250 g heavy cream
- 3 eggs
- black pepper (ground)
- nutmeg
- 50 g freshly grated Gruyère cheese

Knead the spelt flour with a pinch of salt, diced butter and 3 tbsp cold water into a dough. Shape it into a ball, roll it out between plastic wrap and line a tart pan with it. Chill for 45 minutes.

Dice the smoked ham finely and fry in a pan over medium heat until crisp, stirring occasionally. Drain the fat on paper towels.

Whisk the cream with the eggs, season with salt, pepper and nutmeg, then fold in the grated cheese. Spread the ham over the dough, pour the egg‑cream mixture on top. Bake the quiche in a preheated oven at 200°C (fan 180°C) for about 25–30 minutes until golden brown.
