Quarkstollen

Ingredients
- 50 g candied orange
- 50 g candied lemon
- 50 g cranberries
- 50 g Raisins
- 40 ml rum
- 400 g flour
- 1 tsp Baking powder
- 100 g sugar
- 1 untreated lemon (zest)
- 200 g quark
- 200 g soft butter
- powdered sugar (for dusting)

Chop the candied orange, candied lemon, cranberries and raisins and mix with rum to macerate.

Preheat the oven to 160°C fan.

Sift flour with baking powder onto a work surface. Create a well in the center and add sugar, lemon zest, quark and 150 g butter. Roughly chop and knead all ingredients quickly into a smooth dough. Fold in the fruit and shape the dough into a stollen loaf. Place on parchment paper (optionally wrap with a multi-folded strip of foil to keep it from falling apart) and bake for about 1 hour. If the loaf darkens, cover with foil.

Remove the stollen from the oven and brush with remaining melted butter. Generously dust with powdered sugar and let cool.
