Quark Egg Cream

Ingredients

  • 3 eggs
  • 2 anchovy fillets (chopped)
  • 150 g quark
  • 1 bell pepper
  • 1 pickled cucumber (finely chopped)
  • 1 onion (finely chopped)
  • 50 g butter
  • 1 tsp Mustard
  • 1 tbsp parsley (chopped)
  • 1 tbsp sweet paprika powder
  • Salt
  • black pepper (freshly ground)

Instructions

    Boil eggs for 10 minutes. Then cool, peel and finely chop two of them. Slice the third egg into rounds.

    Wash the bell pepper, halve it, remove seeds and finely chop it as well.

    Whisk butter with mustard and quark until smooth. Stir in paprika (reserve 1 tbsp for garnish), anchovies, cucumber, onion, eggs and parsley. Season with salt and pepper to taste and pour into a bowl. Garnish with egg rounds and remaining paprika cubes before serving.
