Ingredients

  • 200 g pumpkin flesh (cut into strips)
  • 0.5 l vegetable oil
  • Salt
  • 600 g pumpkin flesh (diced)
  • 1 small Boskop apple
  • 1 onion
  • 25 g butter
  • 0.5 l vegetable broth
  • 0.5 tsp Curry Powder
  • 0.5 tsp ginger powder
  • 3 tbsp sour cream
  • 1 glass sherry
  • Salt

Instructions

    Heat the oil in a pot for frying the pumpkin strips (small bubbles should rise when a wooden spoon is added) and fry the vegetable strips until crisp brown. Drain on kitchen paper and sprinkle with salt.

    Peel and dice the apple and onion. Heat butter in a pot, add the apple and onion cubes and sauté briefly, then add the pumpkin flesh and let it simmer for a short time. Pour in broth and simmer for about 20 minutes. Add spices, sour cream, and sherry. Puree the soup with an immersion blender, season, and serve garnished with the fried pumpkin strips.
