Ingredients

  • 500 g ground pork
  • 1 clove garlic
  • 1 tsp freshly grated ginger
  • 1 egg
  • 2 tbsp white bread crumbs
  • light soy sauce
  • 2 tbsp plant oil
  • 250 g wide rice noodles
  • 800 ml vegetable broth
  • 200 g broad beans
  • 150 g corn kernels
  • 1 tbsp diced red onion
  • 1 tbsp chopped coriander leaves

Instructions

    Place the ground pork in a bowl. Peel and finely chop the garlic. Mix in the ginger and egg. Add enough bread crumbs until the mixture is well-formed. Season with soy sauce and shape into small balls. Fry them in hot oil for 6‑8 minutes until golden brown.

    Cook the noodles according to package instructions.

    Bring the vegetable broth to a boil. Wash, trim, and cut the beans into 3‑4 cm pieces. Drain the corn kernels and cut into small pieces. Add both to the broth and simmer for about 8 minutes. Drain the noodles and add them with the meatballs to the soup. Do not cook further; just let it heat through and adjust seasoning with soy sauce.

    Serve in bowls, garnished with diced onion and coriander.
