Pumpkin Ground Meat Stew with Potatoes

Ingredients
- 500 g pumpkin flesh
- 1 stalk leeks
- 1 onion
- 2 Garlic cloves
- 200 g white beans (canned)
- 2 tbsp sunflower oil
- 200 g diced tomatoes (canned)
- 400 ml meat broth
- 1 bay leaf
- 400 g waxy potatoes
- Salt
- 400 g ground meat
- 1 egg
- 2 tbsp breadcrumbs
- 1 tbsp freshly chopped parsley
- pepper (ground)
- 1 tbsp freshly chopped marjoram

Dice the pumpkin. Wash, trim and slice the leeks into rings. Peel and finely chop the onion and garlic. Rinse the beans and drain well. Briefly sauté the onion and garlic in hot oil, add the leeks and pumpkin, cook briefly, then add tomatoes and broth. Add the beans and bay leaf, cover and simmer gently for about 15 minutes with occasional stirring.

Peel the potatoes and slice them. Boil in salted water for about 20 minutes until tender.

Meanwhile mix the ground meat with egg, breadcrumbs, parsley, salt and pepper. Form small balls and add to the pumpkin stew. Cover and simmer for about 15 minutes, stirring gently occasionally; add more broth if needed. Finally add marjoram and season with salt and pepper. Distribute potatoes on plates, ladle the stew over them, and serve.
