French Apple Cake from Brittany

Ingredients

  • 120 g butter
  • 80 g coconut palm sugar
  • 0.5 tsp vanilla powder
  • 1 pinch salt
  • 3 eggs (size M)
  • 0.5 Organic lemon
  • 150 g Whole wheat flour
  • 60 g ground almonds
  • 1 tsp Baking powder
  • 50 g apple sauce
  • 3 tbsp Milk (3.5% fat)
  • 800 g apples
  • 3 tbsp almond slivers

Instructions

    Beat 100 g butter with coconut palm sugar, vanilla powder and salt until fluffy. Add eggs one at a time. Wash the lemon hot, pat dry, grate the zest and squeeze out the juice. Mix the lemon zest into the butter mixture.

    Combine flour, ground almonds and baking powder and gradually fold into the butter mixture alternately with apple sauce and milk. Peel, quarter and core the apples, then cut fine slits on the top surface. Toss them with the lemon juice.

    Transfer the batter to a greased springform pan, smooth the top and place the apples with their slits facing up. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 50 minutes. Remove from the oven and cool. While cooling melt the remaining butter in a saucepan, stir in almond slivers and spread over the cake. Optionally dust with raw cane sugar powder before serving.
