Ingredients
- butter (for the pan)
- flour (for the pan)
- 200 g Flour
- 100 g starch
- 20 g yellow baking powder (lemon flavor)
- 0.5 tsp Baking soda
- 100 g softened butter
- 90 g sugar
- 2 Eggs
- 1 tsp lemon zest (unprocessed)
- 50 ml milk (add more if needed)
- 100 ml cherry juice
- 250 g powdered sugar
- Silver pearls (in various colors, for decoration)

Preheat the oven to 160°C fan. Grease and flour the cupcake pan.

Mix the flour with the starch, baking powder, and baking soda. Beat the butter until fluffy, then fold in the sugar until it no longer crunches. Gradually add the eggs while beating for 5 minutes. Stir in the lemon zest. Then alternately fold in the flour mixture with the milk until a thick dough forms; add more milk if needed. Immediately pour into the prepared pan, smooth the top, and bake in the preheated oven. After 15 minutes, use a fork to make circular cuts on the surface of the cake. Return to the oven and bake on the middle rack for about 30 minutes. Do a toothpick test. When the cake is done, transfer it onto a cooling rack and let it cool.

Only mix the glaze after the cake has cooled.

For the glaze, bring the cherry juice to a boil in a saucepan and reduce by half. Whisk 2–3 tablespoons of the reduced juice with powdered sugar until a thick glaze forms. Brush the cake with this glaze, decorate with silver pearls, and let it dry.
