Ingredients

  • 42 g fresh yeast (1 cube)
  • 500 g wheat flour
  • 0.5 tsp Salt
  • 10 g baking soda
  • coarse sea salt (for sprinkling)

Instructions

    Crush the yeast and stir it into 5 tbsp lukewarm water until smooth. Mix the flour with the salt, place in a bowl, and press a well in the center. Pour the yeast mixture into the well, dust with a little flour, cover with a kitchen towel, and let rise in a warm spot for 15 minutes. Then add about 200 ml lukewarm water and knead into a smooth dough. Cover and let rise for at least 1 hour until doubled in volume.

    Preheat the oven to 180°C fan (350°F).

    Knead the dough again, divide it into about 15 strands, and roll each strand into a 40 cm long rope. Shape the ropes into pretzels and place them on baking trays lined with parchment paper. Heat one liter of water and dissolve the baking soda in it. Dip each pretzel individually into the soda solution for about 20 seconds, lift out, let drip off, and return to the trays. Let rise again for 15 minutes. Sprinkle with coarse sea salt and bake in the preheated oven for 20-25 minutes until golden brown and crisp.
