Pretzel Muffins

Ingredients

  • 4 pretzels (unsalted, leftover)
  • 100 g heavy cream
  • 100 ml milk
  • 2 Eggs
  • 50 g grated Emmental cheese
  • 2 tbsp rolled oats
  • nutmeg
  • 1 Egg white
  • Salt

Instructions

    Preheat the oven to 180°C (160°C fan). Cut the pretzels into small cubes. Warm the cream and milk, pour over the pretzel cubes and let sit for about 10 minutes.

    Knead the eggs, cheese, oats, and a pinch of nutmeg into the pretzel mixture. Whisk the egg white until stiff and fold in; season the batter with a pinch of salt.

    Place paper liners in the depressions of a mini muffin tin and fill each with 2 teaspoons of batter. Bake the muffins on the middle rack for 20 minutes, or until golden brown.
