Ingredients
- 1.5 kg waxy potatoes
- 3 eggs
- 4 Tbsp breadcrumbs
- 1 Zucchini
- 1 bunch chives
- 250 g cream quark
- 50 g sour cream
- salt (pepper)

Peel, wash, and grate the potatoes coarsely on a box grater. Wash the zucchini, trim ends, and grate it as well. Squeeze the potato mixture in a kitchen towel to remove excess moisture, then mix with salt, breadcrumbs, eggs, and grated zucchini. Heat oil in a pan, drop spoonfuls of batter, press into patties, and fry until golden on both sides. Set warm.

Whisk quark with crème fraîche, season with salt and pepper. Slice chives into rings and fold in. Serve the quark alongside the rösti.
