Ingredients

  • 1 chili pepper
  • 3 Garlic cloves
  • 2 egg yolks
  • Salt
  • 200 ml olive oil
  • Lemon juice
  • Cayenne pepper
  • 1 handful pineapple sage (5 g)

Instructions

    Wash the chili pepper, dry it with a towel, halve it, remove seeds and finely chop. Peel the garlic cloves and press them through a garlic press.

    Add egg yolks, mustard, a pinch of salt and chopped chili to a large bowl and whisk until white‑creamy. Gradually add olive oil in small drops at first, then slowly pour while continuously whisking.
