Potato Waffles with Applesauce

Ingredients

  • 750 g waxy potatoes
  • 5 tbsp whole wheat flour
  • 3 eggs
  • Salt
  • 1 tsp butter (for greasing)
  • 300 g applesauce (for serving)

Instructions

    Peel, wash, and finely grate the potatoes. Drain them over a sieve and then press them in a bowl to remove excess liquid. Set aside the potato water until the starch settles.

    Carefully pour off the remaining liquid and mix the grated potatoes with the starch, flour, and eggs. Season with salt. Preheat the waffle iron and lightly grease it with butter.

    Spoon some of the potato batter into the iron, spread evenly, and bake waffles one after another until golden brown. Serve warm or cold with applesauce.
