Potato tortilla bites

Ingredients
- 600 g mostly firm potatoes (cooked the day before)
- 1 onion
- 2 Garlic cloves
- 2 tbsp olive oil
- Salt
- 5 eggs
- 3 tbsp whipping cream
- pepper (ground)
- 250 g Cherry Tomatoes
- 200 g Serrano ham (thin slices)

Preheat the oven to 180°C fan.

Peel and slice the potatoes. Dice the onion. Peel the garlic and cut into thin slices. Heat the oil in a large ovenproof pan. Add the potatoes and onions, cover and gently fry for about 5 minutes.

Meanwhile whisk the eggs with the garlic and cream in a bowl. Season with salt and pepper and pour over the potato-onion mixture. Stir to distribute evenly, let set briefly, then bake for 15-20 minutes until finished. Optionally cover with foil to prevent excessive browning.

Let the tortilla cool after baking. Wash and halve the tomatoes. Roll each ham slice into a roll and skewer with a tomato half.

Cut the tortillas into small cubes and arrange on a plate, each topped with a tomato-ham skewer.
