Potato Tomato Stew with Swiss Chard and Sausage

Ingredients

  • 4 tomatoes
  • 600 g waxy potatoes
  • 1 onion
  • 2 stalks celery
  • 300 g Swiss chard
  • 400 g pork sausage
  • 2 chili peppers
  • 2 Garlic cloves
  • 1 tbsp oil
  • 800 ml broth
  • Salt
  • Pepper (freshly ground)
  • basil (for garnish)

Instructions

    Wash the tomatoes, remove the stem ends and dice them. Peel, wash and dice the potatoes. Peel and finely dice the onion. Wash, trim and slice the celery into rounds. Wash the Swiss chard, remove tough leaf stems and cut leaves into strips. Slice the pork sausage. Finely chop the chili peppers and peeled garlic cloves.

    Sauté the sliced sausage with garlic, onions and chili in hot oil. Add the Swiss chard and celery. Pour in broth. Stir in potatoes and tomatoes, cover and simmer for about 30 minutes. Finish by seasoning with salt and pepper and serve garnished with basil.
