Potato Stew with Savoy Cabbage and Bacon

A hearty potato stew featuring fresh ingredients from the stew category, served with savory bacon and savoy cabbage.
Ingredients
- 500 g bacon (raw, diced)
- 250 g bratwurst (sliced)
- 250 g onions (thinly sliced)
- 500 g potatoes (firm, peeled and cubed)
- 1 tsp thyme (fresh)
- black pepper (white)
- 1 pinch mustard powder
- 0.5 small savoy cabbage (washed and shredded)
- 1 bay leaf
- chicken broth (to top up)
- 2 tbsp butter (in cubes)
- fresh herbs (for garnish)
Instructions

Preheat the oven to 170°C.

Mix potatoes, onions, herbs, and spices in a bowl.

Layer alternately with bacon, sausages, and savoy cabbage in a deep casserole, finishing with a vegetable layer.

Pour chicken broth over until everything is just covered. Cover with a lid.

Bake/simmer in the oven for 1½ hours. After one hour remove the lid. Then stir roughly and add butter cubes, finish cooking at 200°C until the bacon is done. Sprinkle with herbs before serving.
