Potato Spinach Gratin

Ingredients

  • 500 g boiled starchy potatoes (from the day before)
  • 400 g spinach
  • 2 onions
  • 1 Garlic clove
  • 1 tbsp butter
  • 300 g whipping cream
  • 150 g grated Emmental cheese
  • 100 g crumbled sheep cheese
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • butter (for greasing the dish)

Instructions

    Slice the potatoes into rounds.

    Wash, rinse, and drain the spinach in a pot with a little boiling salted water until it wilts; strain through a sieve, let cool slightly, then squeeze out excess moisture and fluff again.

    Peel and finely dice the onions; sauté in hot butter until translucent, add crushed garlic, then add the spinach and cook vigorously for several minutes until most liquid has evaporated; season with salt, pepper, and nutmeg.

    Grease a baking dish; layer potatoes, seasoning each layer with salt and pepper, sprinkle some spinach over, scatter both cheeses, then repeat layers until all ingredients are used, finishing with a top layer of potatoes.

    Season each layer with salt and pepper. Pour cream over the top, sprinkle remaining cheese, and bake at 200°C for about 20 minutes.
