Ingredients
- 800 g firm potatoes
- 200 g carrots
- 100 g onions
- 2 tbsp butter
- Salt
- Pepper (freshly ground)
- 1 tsp cumin
- 1 tsp Sweet paprika powder
- 1200 ml Vegetable broth
- 150 g small mushrooms
- 200 g Sour Cream
- 0.5 bunch fresh parsley

Wash, peel, and dice potatoes and carrots. Peel onions, halve lengthwise, and dice. Heat 2 tbsp butter in a pot. Add carrots and onions; sauté for 3–4 minutes over medium heat. Add potatoes and spices, pour in broth, bring to a boil, then simmer for about 10 minutes.

Wash, clean, and slice mushrooms. Add them to the soup and let it simmer for another 10 minutes.

Stir in sour cream and warm through. Wash parsley, shake dry, remove leaves, and roughly chop. Garnish with parsley and serve.
