Ingredients
- 400 g potatoes (8 potatoes)
- 300 g fresh cauliflower (or 200 g frozen cauliflower)
- 100 ml apple juice
- Salt
- white pepper
- nutmeg
- 2 tbsp Rapeseed oil
- 20 g sesame seeds (1.5 tbsp)
- 100 g cream cheese

Wash the potatoes, put them in a pot and cook covered in lightly salted water for about 20 minutes.

Meanwhile wash, trim and halve fresh cauliflower; thaw frozen cauliflower if used. Put cauliflower with apple juice in another pot, season with salt and pepper, add a pinch of nutmeg, bring to a boil and simmer covered over medium heat for about 12 minutes.

Shock cooked potatoes in cold water, peel and cut into wedges.

Heat oil in a non‑stick pan. Add potato wedges, season with a little salt and sesame seeds. Fry, turning frequently, until crisp brown in 6–8 minutes.

Stir cream cheese into the cauliflower. Blend everything with an immersion blender until smooth, adding enough water to achieve a creamy puree. Season with salt and pepper, reheat briefly, and serve with the sesame potatoes.
