Ingredients

  • 150 g waxy potatoes
  • 2 egg yolks
  • Salt
  • Pepper
  • 4 turkey schnitzels (about 150 g each)
  • 1 tbsp Rapeseed Oil
  • 2 sprigs parsley

Instructions

    Peel, wash and grate the potatoes coarsely. Squeeze out excess moisture, place in a bowl. Add egg yolks, season with salt and pepper, and mix.

    Season the schnitzels with salt and pepper. Heat oil in a pan and brown each side for about 2 minutes.

    Place the schnitzels in a shallow baking dish, spread potato mixture over them, and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 10‑15 minutes until golden brown. Wash and dry parsley.

    Serve the potato schnitzel on warmed plates, garnished with parsley.
