Ingredients

  • 800 g small potatoes
  • 4 red bratwursts
  • 1 EL clarified butter
  • 1 TL oil
  • Salt
  • Pepper
  • 200 g fresh spinach leaves
  • 0.5 bunch Chives
  • 50 ml Vegetable broth
  • 6 EL herb vinegar
  • 1 TL oil
  • Salt
  • Pepper

Instructions

    Brush a baking sheet with 1 TL oil and sprinkle with salt and pepper. Wash the potatoes, halve or quarter them, and place them cut side down on the prepared baking sheet. Bake in a preheated oven at 200°C for about 30 minutes.

    While the potatoes bake, wash the chives, dry them, and slice into fine rings; set aside 2 EL. Mix the remaining ingredients to make the salad dressing and season to taste. Wash the spinach, dry it, and arrange in bowls. Slice the red bratwursts diagonally into about 1 cm thick slices and fry them thoroughly in clarified butter.

    Remove the potatoes from the oven, add them to the bratwurst, sauté briefly, then combine. Distribute the salad dressing over the four bowls, add the potato‑bratwurst mixture, sprinkle with chives, serve warm.
