Potato Salad with Zucchini

Ingredients

  • 800 g potatoes
  • 10 cm zucchini
  • 0.25 l water
  • 1 EL vegetable broth
  • 1 EL mustard
  • 1 TL Sambal oelek
  • 3 EL white wine vinegar
  • Salt
  • 5 EL germ oil
  • 1 bunch parsley

Instructions

    Peel, wash, and boil potatoes in salted water for about 25 minutes; drain, let cool slightly, then slice while warm.

    Boil water, stir in broth, mustard, Sambal oelek, vinegar, salt, and oil until combined.

    Add the sauce to the potato slices and allow to marinate for about 1 hour.

    Wash zucchini and shave into very thin ribbons.

    Wash parsley, pat dry, and finely chop the leaves.

  6. 6.

    Fold zucchini and parsley into the potato salad and serve on a bed of fresh lettuce.
