Ingredients

  • 1 kg boiled potatoes (stiff‑cooking)
  • 1 bunch radishes
  • 360 g matjes fillets (6 fillets)
  • 150 g pickled cucumbers
  • 2 Apples
  • 300 g low‑fat yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp Crème fraîche
  • 7 tbsp cucumber brine
  • Salt
  • pepper (ground)
  • 2 tbsp chopped dill

Instructions

    Peel and dice the potatoes. Clean, wash, and slice the radishes. Cut the matjes into pieces. Drain and cube the pickled cucumbers. Wash the apples, peel if desired, quarter, core, and chop.

    Whisk together yogurt, mayonnaise, crème fraîche, cucumber brine, salt, pepper, and dill. Mix in the potatoes. Fold in the remaining ingredients (except matjes), taste, then arrange the matjes pieces on top of the potato salad before serving.
