Potato Salad with Radishes and Cucumbers

Ingredients

  • 1 kg firm boiling potatoes
  • Salt
  • 1 onion
  • 150 ml Vegetable broth
  • 1 bunch radishes
  • 100 g cornichons
  • 125 g salad mayonnaise
  • 50 g yogurt
  • 4 tbsp Dijon mustard (cream)
  • ground pepper
  • 1 bunch chives

Instructions

    Wash potatoes and cook in salted water for 20-25 minutes. Drain, cool briefly, then peel. Peel onion and dice. Bring broth to a boil and simmer onion cubes for 5 minutes. Peel potatoes again and cut into pieces. Pour broth over them and let the potatoes steep for 20-30 minutes.

    Rinse radishes, trim, and slice. Quarter cornichons lengthwise. Whisk mayonnaise with yogurt and mustard cream. Season with salt and pepper. Mix potatoes with radishes, cornichons, and salad sauce. Rinse chives, shake dry, finely chop. Sprinkle chopped chives over the potato salad before serving.
